Most restaurants ask you to choose. The Chef's Table asks only that you arrive.

On the evenings Chef Danny offers this table, the kitchen sets aside a small handful of seats for guests who would rather be cooked for than ordered for. There is no printed menu to read past. There are no decisions to balance against your dining companion. The meal is composed by the chef on the evening — drawing on what the kitchen and the season are doing best, what arrived from the farms that week, and the rhythm of the room.

What arrives at the table is the meal Chef Danny wanted to cook that night. We think that is the most honest version of dining you can ask for.

Chef Danny composes each evening the way he would cook for guests at his own table. Some courses will be familiar, anchored in the technique he refined at Napa Rose; others will be experimental, the product of a Tuesday-morning farm delivery or a moment of inspiration with the pastry team. The arc of the meal is his — tempo, weight, where the table lands at the close.

Wine, when you choose it, is selected by John Hansen, Advanced Sommelier and proprietor, in consultation with Master Sommelier Michael Jordan. The pairings are honest to the food and to the moment, not performances.

Everything else — pace, conversation, length of the evening — we let the table set for itself.

FAQ

Why is there no menu?

Because the Chef's Table is the only service at Chez Bacchus where Chef Danny composes for you specifically — not for a printed card. The meal arrives in the form he wanted to cook it that evening, anchored to the season and the kitchen's best work. You are welcome to mention dietary restrictions or strong preferences in your inquiry; everything else is his decision.

When is the Chef's Table available?

Fridays and Saturdays. If your occasion needs a different evening — or if you'd like to host a larger party than 10 — mention it in your inquiry. We accommodate additional dates and larger parties on request, depending on the kitchen's calendar.

How is pricing structured?

Pricing is quoted by our Director of Hospitality directly when they confirm your reservation, based on guest count, evening, and any pairing requests. The Chef's Table is a single-evening, by-arrangement experience — we don't list a flat per-guest rate because the meal is composed individually for each table.

Are wine pairings included?

Optional. Mention it in your inquiry and John Hansen will curate a pairing flight to the meal. If you'd rather steer your own wine, the full Chez Bacchus list is available at the table.

Can dietary restrictions be accommodated?

Yes — vegetarian, vegan, gluten-free, and most allergen requirements are routine. Tell us in your inquiry so Chef Danny can compose around them. For severe allergies, we recommend speaking with Chef Danny or John directly before the evening.

What is the dress code?

Smart casual to business casual. The Chef's Table is a quietly elevated evening — most guests dress up a little for the occasion.

How long does the evening last?

Plan for two to three hours at the table. The pace is set by the table itself, not by us. If you have a hard end time, mention it in your inquiry.
